The Perfect Paleo Breakfast September 9, 2009

I went over to one of my friends houses the other day, and his flatmate is from Mexico (which in NZ is very rare!!). He told me that a common Mexican breakfast is frying a tortilla, and loading guacamole and salsa on top of it. Of course tortillas are out in the Paleo world, but today I had a wave of creativity and decided to try this but with an omelette. So here is the recipe.
Salsa
2 Tomatoes – finely diced
3 Tbspn canned chopped tomatoes
1 Tbspn coriander (cilantro) – coarsely chopped
1/4 cup of cucumber – finely chopped
1/4 tspn chilli powder
1 tspn paprika
Juice of 2 Limes
Mix all ingredients.
Guacamole
1 Avocado
1 Lime
1 Garlic clove finely chopped
1 tspn olive oil
Scoop out flesh of avocado into bowl. Mix in garlic, olive oil and squeeze lime juice in as well. At first mix together with a fork and then once it is somewhat mashed take a teaspoon to it to get a smooth texture.
Omelette
3 Eggs
1 Tbspn Olive Oil
Very basic omelette here as it is a base. Put olive oil in a pan over a medium to high heat. Beat the eggs together and then place egg mix into the pan when hot. Don’t touch the omelette but ocassionally swirl the pan around so that the juices from the egg move around and the omelette becomes evenly cooked. If when you shake the pan the omelette moves around easily it is time to flip it. You only need to cook on the opposite side for a short time if at all (depends on how creamy you want it in the middle).
Place omelette on plate. Spoon guacamole mixture over the omelette than add the salsa on top of that. Enjoy.

Wow, coincidence! I had much the same thing for breakfast this morning, only in place of the tortilla I made a kind of pancake or wrap using ground almonds and ground linseed instead of flour. I bound it with beaten egg and cream then fried it in butter. When it cooled a bit I piled on top avocado mashed with lemon juice, chopped tomato and cucumber & coriander and chives, and sprinkled grated cheese over it all. It was delicious. i wish I had photographed it, too late now!

Great idea! This looks like huevos rancheros – my favorite mexican breakfast. But the regular version has that fried tortilla and beans as well.
