Beef Pot Roast in a Red Wine and Blueberry Sauce

What you need:

Beef Pot Roast

Red Wine

Blueberries

Bay leaf

Cloves

Rosemary

Garlic Clove

Peppercorns

Olive Oil

 

What to do:

Add all ingredients, except blueberries and olive oil, into a saucepan and bring to a boil. Then reduce the heat and simmer for as long as pot roast needs to be cooked for. I usually stick a knife in and if, when you pull it out, it is warm to the touch then the meat is cooked. About 10 minutes before the meat is cooked turn the heat up and reduce the liquid to about half its original volume. Once ready take out the pot roast and let rest for a few minutes. Add the blueberries and some olive oil (or butter is good too, except not on a Paleo Diet) and heat until warm. Serve sauce over sliced beef.

My Paleo ancestors herded goats so I have no problem with using butter or other goat diary products. This pot roast works great in a crock pot (Paleo?).
