Kidney and Beef Stew

Ingredients

2 Sliced Kidneys

4 tomatoes –  chopped roughly

200 – 300g stewing beef

5 sliced mushrooms

onion – coarsely chopped

peppercorns

2 tablespoons of olive oil

bay leaf

1 clove of garlic

2 cups of water

 

Dont cook the beef beforehand as it is better if you let the juices from the meat mix with the sauce. Add all ingredients (except olive oil) into a saucepan and bring to the boil. Lower the heat to a simmer for an hour with no lid on. Near the end of the hour check the sauce and if it is not quite thick then turn the heat up to a boil and keep boiling until it is to a consistency that you like. At the end put in the olive oil.
